Recipe #1:   SEARED SALMON WITH SHITAKE MUSHROOM FRICASSEE RECIPE

This dish is a great way to enjoy fresh salmon, with a crispy skin on a bed of shitake mushrooms.

What You'll Need:

Cooking Instructions:

1. Season salmon with roasted and ground coriander and fennel seeds. Heat clarified butter on medium heat in sautee pan and add fillets, skin-side down - use back of spoon to press center of filet down in pan for 30 seconds to ensure filet will cook flat and evenly. Add crushed whole garlic cloves and thyme for added flavor.

2. Add butter to separate pan with shallots and garlic heating over medium heat, stirring occasionally. Slice mushrooms and add to pan with shallots and garlic once they have begun to cook down. Mix together, coating all ingredients with butter.

3. Cube blanched potatoes. Once mushrooms are tender, add potatoes and return to heat.

4. Once salmon skins are crisp and browned, flip salmon filets, add a little bit of butter to pan and then basting filets with butter, garlic and thyme, returning to heat until salmon is cooked to desired doneness, careful not to overcook.

5. Chop fresh parsley and add to pan with mushrooms, season with salt, espelette pepper and stir to mix.

6. Plate mushroom fricassee and top with salmon filet, placed skin-side up. Add extra butter to salmon pan and mix until slightly frothy. Drizzle plate with butter from salmon pan, sprinkle with a little bit of salt and enjoy.


Recipe #2:   GRILLED CHICKEN BREASTS WITH SPINACH AND GOAT CHEESE STUFFING

A great and simple dish for bachelors, families, or parties since the ingredients can be prepared in advance and stored in the fridge until ready to cook and eat. This recipe serves 2.

What You'll Need:

Cooking Instructions:

Makes 2 generous entrée servings or 3-4 appetizer servings.
1. Pre-heat oven to 400 degrees

2. In large skillet heat 1 teaspoon of the oil and cook garlic until aromatic (no more than a minute) over medium heat

3. Add in the spinach and cook until it wilts and water evaporates (about 2-4 mins)

4. Season with salt and pepper (and maybe some pepper flakes) then transfer to plate

5. Towel out skillet

6. Remove excess fat from chicken and cut a pocket in each. Start from center and make large enough pocket to accommodate filling being sure not to cut all the way through. Try to leave a 1 inch border

7. Place chicken pocket face up and season with salt and pepper

8. Fill evenly with spinach and cheese

9. Seal with toothpicks or cooking twine

10. Season outside of chicken with salt and pepper

11. Heat remaining 1 teaspoon of the olive oil in pan and cook chicken until browned, about 5 minutes each side

12. Transfer to a baking dish and cook in the oven at 400 for about 10 minutes (If you have an ovenproof skillet, then simply transfer the browned chicken in skillet to the oven at this time and cook at 400 degrees for about 10 minutes or until cooked through)

13. Remove toothpicks or twine and serve hot!
